Beth is a Registered Dietitian and Nutritionist who has promoted safe and effective ketogenic therapies since 1991. She’s managed ketogenic diets in individuals with autism, epilepsy, multiple sclerosis, mitochondrial and metabolic disorders, migraine headache, multiple sclerosis, rare genetic disorders, various cancers, and, Parkinson’s disease.
Beth has authored over 50 publications, co-authored The Modified Keto Cook Book (Demos), co-organized three global ketogenic symposiums and is the designer of KetoDietCalculator; a web-based program for calculating diets. She has provided diet training to over 250 medical centers worldwide, owns Ketogenic Therapies, LLC and is a consultant to The Charlie Foundation for Ketogenic Therapies.
Prof. Louise Burke
OAM, PhD, APD, FACSM
Louise is a sports dietitian with over 35 years of experience in the education and counseling of elite athletes. She has been Head of Sports Nutrition at the Australian Institute of Sport since 1990. She was the team dietitian for the Australian Olympic Teams for the 1996-2012 Summer Olympic Games.
Louise’s publications include nearly 300 peer-reviewed research papers and book chapters, and the authorship or editorship of several textbooks on sports nutrition.
She is on the editorial board of the International Journal of Sport Nutrition and Exercise Metabolism, was a founding member of the Executive of Sports Dietitians Australia and is a Director of the IOC Diploma in Sports Nutrition. She was awarded a Medal of the Order of Australia in 2009 for her contribution to sports nutrition. Louise currently holds a Chair in Sports Nutrition in the Mary MacKillop Institute for Health Research, Australian Catholic University.
Louise's recent research has included an evaluation of a ketogenic diet on the performance of elite race walkers.
Prof. Clare Collins

Clare is a National Health and Medical Research Council (NHMRC) Senior Research Fellow & Professor of Nutrition & Dietetics & Director of Research for the School of Health Sciences, Faculty of Health and Medicine at the University of Newcastle.
She has published over 280 manuscripts and supervised 24 Higher Degree Research candidates to completion. And leads the largest team of dietitian researchers internationally, in assessing dietary intake and using technology to evaluate the impact of food and nutrition on eating patterns and diet-related health across key life stages and chronic disease conditions.
Clare is currently Acting Director, Priority Research Centre in Physical Activity and Nutrition at the University of Newcastle, NSW, Australia. And served on the Australia and New Zealand Obesity Society (ANZOS) council for 6 years, with 2 years as Vice President (2007-08).
She is a Fellow of the Dietitians Association of Australian (DAA) and has been a DAA media spokesperson for 17 years. With over 1500 media interviews, she is a sought after nutrition commentator, demystified nutrition and health science across a range of media from Dr Karl and Triple J, to morning TV including Sunrise, and The Circle; to magazines and newspapers internationally.
Clare is a columnist for The Conversation, Eating Science – making nutrition research digestible, with over 4 million readers. She was a clinical paediatric dietitian for 20 years at John Hunter Children’s Hospital, NSW.
